The sun is shining and a trip to one of Ekerö’s fantastic bathing places or attractions attracts. Time to pack the picnic basket! But with what? Here are 5 suggestions on the perfect summer finger food to take on today’s trip! All the equipment required for cooking is available at the hotel.
Making pancakes is easy and few ingredients are required. In addition, you can fill them, roll up and easily take with you on your excursion. Buy a good jam, cottage cheese or other to fill them with and eat cold. Pancakes always make a success! And if you don’t want to fry your own, then you can just as well buy ready made.
2 1/2 dl wheat flour
1/2 teaspoon salt
6 dl milk
3 tbsp butter (1 tbsp corresponds to about 15 g)
Mix flour and salt in a bowl. Beat in half of the milk and blend to a smooth batter. Add the rest of the milk and the eggs. Melt the butter in the frying pan and then add to the batter. Fry thin pancakes in the frying pan and let them cool. Put on some jam or other filling, roll them and then enjoy!
Maybe the ultimate picnic food? Plain pasta is usually vegan and for those who need a gluten-free choice, this is to be found in almost every grocery store today. You can vary your pasta salad in a thousand ways. Put in exactly what you like! If you need inspiration, here’s our suggestion!
Italian pasta salad about 4 servings
1 pc pasta 400-500 grams (choose your own favorite, we like penne)
1 feta cheese
1 small jar of sun-dried tomatoes
1 red onion
1 small bag of arugula salad
A splash of olive oil, salt and pepper
Boil the pasta according to the instructions on the package and let cool. Divide the mozzarella, the sun-dried tomatoes and the bell pepper into smaller pieces. Slice the red onion thinly and crumbly the feta cheese. Mix everything together with the arugula and add some olives, olive oil, salt and pepper. Done!
Äggmacka deluxe – an extraordinary egg sandwich
Another Swedish picnic classic. Tasty and saturating! Can of course be eaten plain, topped with Kalles kaviar, but here we make an extra moderate variant. An äggmacka deluxe!
4 egg sandwiches
2 bake off baguettes or optionall sliced bread
8-12 slices of smoked turkey
8-12 slices of cheese
4 lettuce leaves
1 large tomato
Bake the bread according to the instructions on the package if you choose bake off. Fry the eggs in some butter in the frying pan. When the bread has cooled, spread some butter on the bottom and mustard on the top. Put in some salad leaves, cheese, turkey, the fried eggs and tomato. Put together, fold in sandwich paper – enjoy!
A pizza and a bun in one, can it be better? These rolls are incredible. Of course you can make your own pizza dough and tomato sauce, but we think ready-made works fine!
Pizza rolls for 4 people
1 pizza kit
1 bag of grated cheese (150 gr)
100 grams of smoked ham
2 tablespoons dried oregano
Preheat the oven to 200°C. Roll out the dough and spread a thin layer of tomato sauce upon. Shred the ham. Sprinkle on some grated cheese, ham and half the amount of oregano. Roll up into a roll. Cut the roll into 16 buns and place them on a baking sheet paper. Brush with beaten egg and sprinkle over the rest of the oregano. Bake in the middle of the oven for about 10 minutes. Yummy!
These saturating clamps are magical. The horseradish is really the icing on the cake!
Salmon clamps for 4 people
4 small round flatbreads
4 slices of smoked salmon (100-150 gr)
1 pct horseradish flavoured cream cheese
Boil the eggs for 6-7 minutes. Spread the cream cheese on the flatbreads and place one slice of salmon on each. Slice the eggs and place half an egg on each bread. Sprinkle on some chopped dill. Fold it as a wrap! Put some sandwich or baking sheet paper round the clamp.
